Dairy Free Kale Basil Cashew Pesto

This is a rich flavorful pesto made with kale, basil, cashew, nutritional yeast and garlic. It is Dairy Free and Vegan. Rich and Bold. It promises to be your new favorite pesto!

Equipment

  • Blender
  • Food Processor

Ingredients
  

  • 2 Cups Lacinato (Dinosaur) Kale Stems removed and Chopped.
  • 1 Cup Basil
  • 4 Garlic Cloves Peeled.
  • 1/2 Cup Cashews
  • 2 Tbsp Nutritional Yeast
  • 1/2 Tsp Salt
  • 1/8 Tsp Red Pepper Flakes
  • 1/2 Cup Olive oil
  • 1/2 Cup Almond Milk
  • Squeeze of Lemon

Instructions
 

  • Take all of your ingredients and add it to a blender or food processor. I personally prefer the blender.
  • Blend, making sure to push down all the ingredients from the sides with a tamper or rubber spatula until it is fully incorporated and well blended.
  • Hold in an airtight container for up to a week.

Notes

I love pesto! It is wonderful on pasta, sandwiches, grilled meats, vegetables, eggs, and pizza sauce.
