Jess Delicious Shrimp Fried Rice
Try this quick delicious shrimp fried rice. It's a perfect way to use up leftover rice.

- 2 Tbsp Avocado Oil
- 1 lbs Shrimp Deveined and Peeled.
- 2 Cups Cooked Rice Day Old and cold preferably
- 2 Tbsp Sesame Oil
- 2 Tbsp Rice Wine Vinegar
- 1 Tbsp Mirin
- 3 Tbsp Coconut Aminos or Soy Sauce
- 1 Tbsp Sriracha
- 1 Yellow Onion Diced
- 1 Cup Carrots Diced
- 1 Cup Peas
- 2 Eggs Beaten
- 1 Tbsp Butter I use Earth Balance. (Optional)
Heat up a large skillet or wok Add in 2 Tbsp oil.
Once heated add in your yellow onion, and carrots. Saute until translucent
Add in your 2 beaten eggs. Scramble them to form set eggs.
Add in your shrimp. Mix.
Next add in your day old rice. Break it up so it's evenly cooking in the pan.
Add in your coconut aminos, mirin, rice wine vinegar, coconut aminos and sriracha.
Finally add in your peas.
Mix everything well.
Let everything cook 6- 8 minutes stirring occasionally until rice becomes brown and crispy.
Taste, Season and Serve!
