Fried rice is one of the most versatile dishes in my opinion. You can pretty much add anything you’d like in it. Carrots, onions, greens, peas. It has savory umami flavor from the coconut aminos and mirin. Mixed with a oozy egg on top, perfection. I like to consider this a breakfast rice because the egg is made separately and not scrambled in the rice but honestly this dish is perfect for any meal.

Ingredients
  

  • 2 Cups White Rice Cooked day old rice works best.
  • 2 Eggs Soft Boiled
  • 1/4 Cup Carrots Diced
  • 1/4 Cup Yellow Onion Diced
  • 1/4 Cup Green Onions Chopped. Ends removed.
  • 2 Lacinato Kale (aka Dinasaur Kale) Leaves Stems removed and Chopped
  • 2 Tbsp Butter or Oil I use Earth Balance Dairy plant based butter
  • 2 Tbsp Mirin
  • 2 Tbsp Rice Wine Vinegar
  • 1/4 Cup Coconut Aminos or Soy Sauce
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Sambal
  • 1 Avocado Diced
  • 1 tbsp Everything But The Bagel Seasoning For garnish

Instructions
 

  • Start by making your soft boiled eggs.
  • For the Instant Pot you want to turn it on manual. Set for 3 minutes. Place eggs on trivet. Cook and quick release when finished. Setting them in ice water when they are finished.
  • If you are using your stove top. Using a small pot bring 2 cups of water to boiling. When the water has come to a boil, place your eggs in and cook for 5 minutes. Set them in ice water when they are finished.
  • Dice your carrots and onions.
  • With a large Saute Pan or Wok. Melt your 2 Tbsp of butter on medium/high heat.
  • Add in your carrots and onions.
  • Saute for 2 minutes and add in your day old rice.
  • You can use rice cooked that day but make sure it is fully cooled down.
  • Break up the rice and let in cook for 2 minutes without moving it.
  • Next add in your mirin, coconut aminos, sesame oil, rice wine vinegar and sambal.
  • Mix Well.
  • Last add in your kale and green onions. Stir for another 2-3 minutes or until you see the rice start to brown really well.
  • Remove from heat, and taste, add additional coconut aminos if needed.
  • Finally to plate, put rice into 2 bowls. Add 1/2 diced avocado to each bowl.
  • Peel your eggs, split 1 boiled egg into each bowl. Season with everything but the bagel seasoning and serve!

Notes

Mirin is a sweet rice wine used in Japanese cooking. You can find it at most grocery stores in the ethnic food isle.
Coconut Aminos is very similar to soy sauce. It is gluten and soy free. It is made from the fermented sap of the coconut palm.
Day old cold cooked rice is the best rice to make fried rice with because it is hard and a lot of the water has already been absorbed so it wont be mushy.
