There is never not a time for some tasty oven baked korean cauliflower wings. These wings are so spot on. With the batter and the sauce. It’s hard to believe these are made from cauliflower. They are crunchy, spicy and better for you then most wings. So you won’t feel bad when you eat the whole cauliflower!

Tips For Making the Wings

This is the perfect recipe for the cauliflower that has been sitting in your fridge for just a little to long. We’ve all been there. We forgot about it and now it’s there with some brown or black spots on it. And I’m here to tell you it is okay to use. All you need to do is cut off the spots.

If you don’t have a wire rack to cook your cauliflower on that is okay. You can use a regular sheet pan with aluminum foil on it. Be sure to spray your aluminum foil. I also recommend flipping your cauliflower half way through the cooking process so it can evenly cook from all sides.

If you are vegan you can omit the egg wash and either use Just Egg or just use a dairy milk alternative. Use it to coat the cauliflower before you dip it in the breading.

When I make the sauce for these wings I just use the gochugaru powder. This is because the gochujang paste normally has gluten in it. If you would like to use that instead or in addition to the powder your could use 1 tbsp of each. These wings are meant to be spicy. If you don’t like a lot of spice you can cut down to 1 tsp of gochugaru instead if 1 tbsp. If you don’t have gochugaru you can sub it for a cayenne powder but this is what gives it it’s korean flavor so I recommend using it if can find it.

These oven baked korean cauliflower wings don’t hold up for that long as leftovers but don’t I promise you these will be gone before you can even say leftovers!

I love these on their own but feel free to add what ever dipping sauce you would like to them. I would say a good aioli, ginger dressing or veganaise would be nice!

Equipment

Ingredients
  

  • 1 Medium Cauliflower Cut into Florets.

Dry Breading

  • 1 Cup Almond Flour
  • 2 Tbsp Potato Starch
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Cayenne Powder
  • 1/2 Tsp Black Pepper
  • 1 TSP Salt
  • 2 Eggs Beaten
  • 2 Tbsp Almond Milk Or dairy free milk of choice.
  • Cooking Spray I like Avocado cooking spray.

Wing Sauce

  • 1 Tbsp Avocado Oil
  • 2 Tbsp Garlic Minced
  • 2 Tbsp Ginger Minced
  • 1 Tbsp Sesame Oil
  • 2 Tsp Rice Wine Vinegar
  • 1/4 Cup Coconut Aminos Or Soy Sauce
  • 1 Tbsp Gochugaru Powder
  • 1 Tbsp Maple Syrup
  • 1 Tbsp Tomato Paste
  • 1 Cup Vegetable Stock
  • 1 Tbsp Corn Starch

Garnish

  • 2 Green Onions Minced
  • 2 Tbsp Sesame Seeds

Instructions
 

  • Start by Preheating your oven to 425 degrees.
  • Next you want to take your cauliflower flip it over top side down and remove the stem.
  • I like using my knife to cut all around the core first. Take your knife and make a cross incision all the way through the stem making an x.
  • This allows you to break it open into 2 halves. Cut out the stem with your knife and give it a good twist to remove it.
  • Now you can start chopping your florets into large bite size pieces and putting them into a bowl.

Breading Your Cauliflower Wings

  • In another bowl mix all your dry ingredients for your breading together. Make sure it's well mixed.
  • In a third bowl beat together 2 eggs and 2 tablespoons of almond milk.
  • Use a baking sheet with aluminum foil and place a wire rack on top if you have one.
  • Now set up a station and dip your cauliflower florets into the egg wash, then the dry breading. Make sure it is fully coated and then place on your rack.
  • Once your rack is full, spray with cooking spray and put it in the oven for 25 minutes.

Wing Sauce

  • To make your wing sauce, heat a sauce pan and add in your oil.
  • Next add in your minced garlic and fresh ginger.
  • Now you want to add in all of your other ingredients and the gochugaru stirring consistently.
  • Once you add in your corn starch let it simmer for about 3 – 5 minutes until thickened.
  • Now you can take out your cauliflower and carefully remove it from the rack and place it in a large bowl.
  • Pour your wing sauce over the cauliflower and gently coat.
  • Place back on the rack and in the oven for another additional 5 minutes.
  • Remove and garnish with green onions and sesame seeds.
