Jess Delicious Shrimp Fried Rice was created after I had to go gluten free. Now I am able to make it gluten free with coconut aminos or tamari and I love it! Just as good as take out!

Where Did Fried Rice Come From?

Try this quick delicious shrimp fried rice. It's a perfect way to use up leftover rice.

  • Wok

Ingredients
  

  • 2 Tbsp Avocado Oil
  • 1 lbs Shrimp Deveined and Peeled.
  • 2 Cups Cooked Rice Day Old and cold preferably
  • 2 Tbsp Sesame Oil
  • 2 Tbsp Rice Wine Vinegar
  • 1 Tbsp Mirin
  • 3 Tbsp Coconut Aminos or Soy Sauce
  • 1 Tbsp Sriracha
  • 1 Yellow Onion Diced
  • 1 Cup Carrots Diced
  • 1 Cup Peas
  • 2 Eggs Beaten
  • 1 Tbsp Butter I use Earth Balance. (Optional)

Instructions
 

  • Heat up a large skillet or wok
  • Add in 2 Tbsp oil.
  • Once heated add in your yellow onion, and carrots. Saute until translucent
  • Add in your 2 beaten eggs. Scramble them to form set eggs.
  • Add in your shrimp. Mix.
  • Next add in your day old rice. Break it up so it's evenly cooking in the pan.
  • Add in your coconut aminos, mirin, rice wine vinegar, coconut aminos and sriracha.
  • Finally add in your peas.
  • Mix everything well.
  • Let everything cook 6- 8 minutes stirring occasionally until rice becomes brown and crispy.
  • Taste, Season and Serve!
