Jess Delicious Shrimp Fried Rice
Equipment
- Wok
Ingredients
- 2 Tbsp Avocado Oil
- 1 lbs Shrimp Deveined and Peeled.
- 2 Cups Cooked Rice Day Old and cold preferably
- 2 Tbsp Sesame Oil
- 2 Tbsp Rice Wine Vinegar
- 1 Tbsp Mirin
- 3 Tbsp Coconut Aminos or Soy Sauce
- 1 Tbsp Sriracha
- 1 Yellow Onion Diced
- 1 Cup Carrots Diced
- 1 Cup Peas
- 2 Eggs Beaten
- 1 Tbsp Butter I use Earth Balance. (Optional)
Instructions
- Heat up a large skillet or wok
- Add in 2 Tbsp oil.
- Once heated add in your yellow onion, and carrots. Saute until translucent
- Add in your 2 beaten eggs. Scramble them to form set eggs.
- Add in your shrimp. Mix.
- Next add in your day old rice. Break it up so it's evenly cooking in the pan.
- Add in your coconut aminos, mirin, rice wine vinegar, coconut aminos and sriracha.
- Finally add in your peas.
- Mix everything well.
- Let everything cook 6- 8 minutes stirring occasionally until rice becomes brown and crispy.
- Taste, Season and Serve!
