I could eat this Asian Salad with Sesame Dressing everyday. It is as delicious as it is gorgeous! It has every color of the rainbow. It’s got texture, flavor and is truly a show stopper. You can add additional protein like salmon or chicken. Or you can leave it vegan and use the edamame as the main source of protein. This is a salad that you know is nurturing you from the inside out. An assortment of colorful vegetables, topped with crunchy peanuts and a sweet sesame dressing.  This salad is packed full of vitamins and nutrients making this salad healthy and easy to make.

Tips For Making Asian Salad With Sesame Dressing

Vegetables

A quick way to shred your carrots and cabbage is by using a cheese grater or food processor with the shredder attachment. If you don’t have these you can easily chop the cabbage into thin shreds and cut the carrots into matchsticks.

Shelled Edamame can be found in the frozen foods section. Run the edamame under cold water to thaw them out before adding them to your salad.

Slicing all the other vegetables remember to remove the seeds from the bell pepper and thinly slice them, the radish, cucumber, cherry tomatoes.

Protein

Edamame is a great source of protein, however this salad is also amazing with additional protein like chicken, shrimp or it would go great with my chili lime broiled salmon.

Dressing

This sesame dressing is very straight forward. You can also use soy sauce if you don’t have coconut aminos and you can also substitute maple syrup for another sweetener like honey or agave.

Try this healthy, gorgeous Asian style salad. Packed full of colorful vegetables like shredded red cabbage, carrots, bell peppers, radish, cucumber and avocado. Topped with crushed peanuts and smothered in a sweet and tangy sesame dressing. What's not to love!

Ingredients
  

  • 4 Cups Romaine Lettuce Chopped
  • 1 Cup Shelled Edamame
  • ½ Cup Carrots Shredded
  • 6 Radishes Thinly Sliced
  • 1 Yellow or Orange Bell Pepper Thinly Sliced
  • 2 Avocados Pitted and halved
  • ½ Cup Red Cabbage Shredded
  • 1 Cup Cucumber Thinly Sliced
  • 1 Cup Cherry Tomatoes Thinly Sliced

Garnish

  • 1/2 Cup Crushed Peanuts
  • 1 Tbsp Toasted Sesame Seeds

Sesame Dressing

  • 1/4 Cup Coconut Aminos
  • 2 Tsp Rice Vinegar
  • 2 Tsp Sesame Oil
  • 1 Tsp Maple Syrup
  • ½ Cup Olive oil

Instructions
 

  • Wash and Chop lettuce.
  • Shred Carrots and Red Cabbage
  • Thinly slice cucumbers, bell peppers, cherry tomatoes, radish and avocado.
  • Make dressing by adding all dressing ingredients to a mason jar except oil.
  • Slowly add in the olive oil while whisking the dressing.
  • In a large bowl add in romaine lettuce.
  • In sections add in all of your vegetables including the edamame.
  • Drizzle on sesame dressing and top with crushed peanuts and toasted sesame seeds.
